Ross-born chef, Adam Pavey, who is head chef at the Goat Major in Cardiff, did not have far to look for inspiration for his entry into the 2010 British Pie Week Challenge. His winning Wye Valley Pie is a mix of locally sourced chicken, asparagus, leeks and Tintern Abbey Cheese topped with mouth-wateringly flaky pastry - a winning combination.
Judging the competition was Dan Pearce of The Publican, Luca Nervi of the Craft Guild of Chefs, and Sue Tranter of Jus-Rol. The rigorous judging process awarded points for originality, regionality, simplicity, creativity and passion. They all agreed that the Wye Valley Pie was the best.
Legendary pie creator, Adam Pavey said: "Our locally sourced pie is a huge hit at The Goat Major. Customers especially love the flavours of the Welsh speciality Tintern Abbey Cheese containing shallots and chives which gives an extra dimension to the flavour of the pie. Our Wye Valley Pie is definitely our most popular, I cannot make them quick enough!"
This year's great British Pie Challenge received more entries then ever before. Pubs from up and down the country entered with fantastic support from their local community, The Fountain Inn in Cornwall won the Peoples Choice Award for their Blue Cow Pie.
